The washed process really lets the Castillo and Colombia varietals shine at this altitude—pulled a shot this morning that was smooth and sweet with zero bitterness. My pour-over came out just as clean, and knowing it's certified organic makes the daily cup feel even better.

First brew with this in my Aeropress was incredibly smooth—no bitterness at all. You can really taste the clean, washed-process character from that Tolima altitude. Already ordering more.

I was skeptical about Castillo varietals, but this one from 1700-2000 meters is surprisingly bright and clean in my Aeropress. The organic certification was a nice bonus for the price.
